  • 2 large eggs room temperature
  • 1 tsp vanilla extract (5ml)
  • 1/2 cup Dutch-process cocoa powder (50g)
  • 1/2 cup all-purpose flour (60g)
  • 1/4 tsp salt (1.5g)
Banana Bread Batter
  • 1 cup mashed overripe bananas about 2 large bananas (225g)
  • 1/4 cup unsalted butter melted (57g)
  • 1/2 cup light brown sugar packed (100g)
  • 1 large egg room temperature
  • 1 tsp vanilla extract (5ml)
  • 3/4 cup all-purpose flour (90g)
  • 1/2 tsp baking powder (2.5g)
  • 1/2 tsp ground cinnamon (1.5g)
  • 1/4 tsp salt (1.5g)
Toppings
  • 1/2 cup semi-sweet chocolate chips (85g)
  • 1/2 tsp coarse sea salt flakes for sprinkling after baking

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving a slight overhang on the sides for easy removal.
Make the Batters
  1. In a bowl, whisk together 1/2 cup melted butter and 1 cup granulated sugar for 1 minute. Add 2 eggs and 1 tsp vanilla; whisk vigorously for 2 minutes to dissolve sugar.
  2. Fold in 1/2 cup cocoa powder, 1/2 cup flour, and 1/4 tsp salt just until combined. Set aside.
  3. In a separate bowl, whisk 1 cup mashed bananas, 1/4 cup melted butter, 1/2 cup brown sugar, 1 egg, and 1 tsp vanilla.
  4. Sprinkle 3/4 cup flour, 1/2 tsp baking powder, 1/2 tsp cinnamon, and 1/4 tsp salt over the wet ingredients. Fold gently until just combined.
Assembly and Baking
  1. Pour 2/3 of the brownie batter into the pan. Spread the banana bread batter evenly over the top. Dollop the remaining brownie batter on top and use a knife to swirl the batters in a figure-eight motion.
  2. Scatter 1/2 cup semi-sweet chocolate chips evenly across the marbled top layer.
  3. Bake for 35-45 minutes until a toothpick inserted in the center comes out with moist, fudgy crumbs.
  4. Remove from oven and immediately sprinkle with coarse sea salt flakes. Let cool completely in the pan before lifting out by the parchment paper and cutting into thick square slices.
