Preparation and Cooking
- Preheat oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with 1 tsp (5ml) olive oil, wrap in foil, and roast for 40 minutes. Let cool, squeeze out the cloves, and mince finely.
- In a bowl, vigorously mix the 4 tbsp (60g) softened butter, minced roasted garlic, 1 tbsp (4g) chopped parsley, and 0.25 tsp (1.5g) kosher salt until glossy and cohesive.
- Generously spread the garlic compound butter on one side of all 4 slices of the thick-cut rustic bread.
- Flip two slices over (butter side down). Evenly pile the grated orange cheddar and white mozzarella on the dry sides. Top with the remaining bread slices, butter side facing up.
- Preheat a cast-iron skillet over medium-low heat. Place the sandwiches in the skillet and cook undisturbed for 4 to 5 minutes until the bottom is crispy and golden-brown.
- If needed, cover with a melting dome for 60 seconds to soften the cheese. Use a spatula to carefully flip the sandwiches and cook the second side for another 3 to 4 minutes until golden.
- Remove from the skillet and let the sandwiches rest on a wire rack or plate for exactly 1 minute before slicing to ensure the perfect cheese pull.
