  • 1 lb (454g) Large Shrimp Peeled and deveined, tails on
  • 8 oz (227g) Linguine Pasta Dry
  • 4 tbsp (56g) Unsalted Butter Divided
  • 2 tbsp (30ml) Extra Virgin Olive Oil
  • 4 cloves Garlic Minced
  • 1/4 cup (60ml) Fresh Lemon Juice About 1 large lemon
  • 1/2 tsp (1g) Red Pepper Flakes Adjust to taste
  • 1/4 cup (15g) Fresh Italian Parsley Finely chopped

Equipment

  • 1 Large Skillet Stainless steel or cast iron preferred for searing.
  • 1 Pasta Pot For boiling linguine.
  • 1 Silicone Tongs For tossing pasta and flipping shrimp.

Method
 

Cook the Pasta
  1. Boil linguine in salted water for 1-2 minutes less than package directions until al dente. Reserve 1/2 cup pasta water and drain.
Prepare the Shrimp
  1. Pat shrimp dry. Heat oil and 1 tbsp butter in a skillet. Sear shrimp for 2 minutes per side until pink-orange and golden on edges. Remove and set aside.
Create the Scampi Sauce
  1. In the same skillet, melt remaining butter. Sauté minced garlic and red pepper flakes for 30-60 seconds until fragrant but not browned.
  2. Stir in lemon juice and a splash of reserved pasta water, scraping the bottom of the pan to incorporate flavor.
Combine and Serve
  1. Add pasta and shrimp back to the skillet. Toss vigorously for 1 minute until a glossy, yellow sauce coats the noodles. Top with fresh parsley.
