- Activate Yeast: In a large bowl, combine warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
- Make the Dough: Add flour, salt, and olive oil. Knead with a dough hook for 5-7 minutes or by hand for 8-10 minutes, until smooth and elastic.
- First Rise: Place dough in an oiled bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- Prepare Topping: While the dough rises, combine the melted butter with the minced garlic and chopped fresh herbs. Set aside.
- Shape the Loaf: Punch down the dough and roll it into a 10x15 inch rectangle. Brush with the garlic herb butter and sprinkle with Parmesan cheese.
- Second Rise: Roll the dough into a log and place it on a parchment-lined baking sheet. Cover and let rise for another 30-45 minutes.
- Bake: Preheat oven to 375°F (190°C). Bake for 25-30 minutes, until golden brown. Let cool slightly before slicing.

Notes
