Ingredients

For the Dough
  • 1.5 cups Warm Water 105-115°F or 40-46°C
  • 2 tsp Instant Yeast
  • 1 tbsp Granulated Sugar
  • 3.5 cups All-Purpose Flour plus more for dusting
  • 2 tsp Salt
  • 3 tbsp Olive Oil
For the Garlic Herb Topping
  • 0.5 cup Unsalted Butter melted
  • 4 cloves Garlic minced
  • 0.75 cup Parmesan Cheese freshly grated
  • 2 tbsp Fresh Parsley finely chopped
  • 1 tbsp Fresh Rosemary finely chopped
  • 1 tsp Fresh Thyme finely chopped
  • 1 tsp Sea Salt Flakes for sprinkling

Equipment

  • 1 Stand Mixer Optional, can knead by hand
  • 1 Baking Sheet

Method

  1. Activate Yeast: In a large bowl, combine warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
  2. Make the Dough: Add flour, salt, and olive oil. Knead with a dough hook for 5-7 minutes or by hand for 8-10 minutes, until smooth and elastic.
  3. First Rise: Place dough in an oiled bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  4. Prepare Topping: While the dough rises, combine the melted butter with the minced garlic and chopped fresh herbs. Set aside.
  5. Shape the Loaf: Punch down the dough and roll it into a 10x15 inch rectangle. Brush with the garlic herb butter and sprinkle with Parmesan cheese.
  6. Second Rise: Roll the dough into a log and place it on a parchment-lined baking sheet. Cover and let rise for another 30-45 minutes.
  7. Bake: Preheat oven to 375°F (190°C). Bake for 25-30 minutes, until golden brown. Let cool slightly before slicing.
