  • 2 lbs Yukon Gold potatoes About 6-8 medium potatoes, scrubbed and cut into 1-inch cubes.
  • 1/4 cup olive oil plus 1 tablespoon for later.
  • 1 tsp Italian seasoning
  • 1 tsp salt Or to taste.
  • 1/2 tsp black pepper Freshly ground is best.
  • 4-6 cloves garlic Minced.
  • 1/2 cup Parmesan cheese Freshly grated.
  • 2 tbsp fresh parsley Chopped, for garnish.

Method
 

  1. Place a large baking sheet in the oven and preheat to 425°F (220°C).
  2. Wash, dry, and cube the potatoes. In a large bowl, toss the potatoes with 1/4 cup olive oil, Italian seasoning, salt, and pepper until evenly coated.
  3. Carefully remove the hot pan from the oven. Spread the potatoes in a single, even layer. Roast for 20-25 minutes, until they begin to turn golden.
  4. Remove the pan from the oven. Drizzle with the remaining 1 tablespoon of olive oil, then sprinkle with minced garlic and grated Parmesan. Toss to combine.
  5. Return the pan to the oven and roast for an additional 10-15 minutes, or until the potatoes are deeply golden brown and crispy.
