- Place a large baking sheet in the oven and preheat to 425°F (220°C).
- Wash, dry, and cube the potatoes. In a large bowl, toss the potatoes with 1/4 cup olive oil, Italian seasoning, salt, and pepper until evenly coated.
- Carefully remove the hot pan from the oven. Spread the potatoes in a single, even layer. Roast for 20-25 minutes, until they begin to turn golden.
- Remove the pan from the oven. Drizzle with the remaining 1 tablespoon of olive oil, then sprinkle with minced garlic and grated Parmesan. Toss to combine.
- Return the pan to the oven and roast for an additional 10-15 minutes, or until the potatoes are deeply golden brown and crispy.
- Remove from the oven, garnish with fresh parsley, and serve immediately for the best texture.
