Greek Chicken Flatbread with Creamy Homemade Tzatziki and Charred Pita

Ingredients
  

Chicken & Marinade
  • 1.5 lbs Chicken Breast cut into 1-inch chunks
  • 1 tbsp Dried Oregano
  • 2 tbsp Extra Virgin Olive Oil divided
  • 1/2 tsp Kosher Salt
Homemade Tzatziki
  • 1 cup Plain Greek Yogurt Full fat preferred
  • 1/2 each English Cucumber Grated and squeezed dry
  • 1 clove Garlic Minced
  • 1 tbsp Fresh Dill Chopped
  • 1 tbsp Lemon Juice
Assembly
  • 4 each Thick Pita Breads Pocketless style
  • 1/2 cup Cherry Tomatoes Halved
  • 1/2 each English Cucumber Small cubes
  • 1/4 each Red Onion Thinly sliced
  • 1/2 cup Feta Cheese Crumbled
  • 4 sprigs Fresh Dill For garnish

Equipment

  • 1 Cast Iron Skillet Used for searing chicken and charring pita.
  • 1 Box grater For grating the cucumber.
  • 1 Kitchen Towel or Cheesecloth To squeeze moisture from cucumbers.

Method
 

Prepare the Tzatziki
  1. Grate half the cucumber and squeeze through a kitchen towel to remove all liquid.
  2. Combine yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill in a bowl. Chill until ready to serve.
Cook the Chicken
  1. Toss chicken chunks with olive oil, oregano, and salt.
  2. Heat a skillet over medium-high heat. Cook chicken for 3-4 minutes per side until deep golden-brown and cooked through.
Char the Pita
  1. Place pitas over an open gas flame or in a hot dry skillet for 45 seconds per side until charred and soft.
Assemble
  1. Spread a thick layer of tzatziki on the pita. Top with chicken, tomatoes, cucumber cubes, onions, and feta.
  2. Finish with fresh dill sprigs and serve immediately.

Notes
