Greek Chicken Gyros with Thick Tzatziki and Charred Pita

Ingredients
  

Main Ingredients
  • 1.5 lbs Chicken Breast Sliced into thin strips (680g)
  • 3 tbsp Extra Virgin Olive Oil Divided (45ml)
  • 2 tbsp Lemon Juice Freshly squeezed (30ml)
  • 2 cloves Garlic Minced (6g)
  • 1 tsp Dried Oregano Plus more for garnish (2g)
  • 1 cup Full-fat Greek Yogurt Opaque white (245g)
  • 1/2 large English Cucumber Grated and squeezed dry (150g)
  • 2 cloves Garlic Minced (6g)
  • 4 large Pita Bread Thick and soft flour pitas
  • 2 medium Tomatoes Diced (250g)
  • 1/2 large English Cucumber Diced into chunks (150g)
  • 1 small Red Onion Thinly sliced (100g)
  • 2 tbsp Fresh Dill Small sprigs for garnish (8g)

Equipment

  • 1 Cast Iron Skillet or Grill Pan Essential for achieving dark golden char marks.
  • 1 Box grater For mincing the cucumber for the tzatziki sauce.
  • 1 Kitchen Towel To squeeze moisture out of the grated cucumber.

Method
 

Prepare the Chicken
  1. In a bowl, combine chicken strips, 2 tbsp olive oil, lemon juice, 2 cloves minced garlic, and oregano. Marinate for at least 30 minutes.
  2. Heat remaining oil in a cast iron skillet over medium-high. Sear chicken in batches for 3-4 minutes per side until dark golden char marks appear.
Prepare the Tzatziki and Veggies
  1. Mix Greek yogurt, squeezed cucumber, remaining garlic, and a pinch of salt. Stir until creamy and opaque white.
  2. Dice the tomatoes and remaining cucumber. Thinly slice the red onion and set aside for assembly.
Assemble the Gyro
  1. Lightly toast the pita bread in the same skillet for 30 seconds until soft and warm.
  2. Spread tzatziki on the pita, top with chicken, onions, tomatoes, and cucumber chunks. Garnish with fresh dill and dried oregano flakes.
