  • 1.5 lbs Boneless Skinless Chicken Breasts 680g, sliced into strips
  • 1 tbsp Dried Oregano 3g
  • 1 tbsp Olive Oil 15ml
  • 1 cup Long-Grain White Rice 185g, uncooked
  • 2 cups Water 475ml
  • 1 cup Greek Yogurt 245g, plain and thick
  • 0.5 ea English Cucumber Grated and squeezed dry
  • 2 cloves Garlic minced
  • 1 cup Cherry Tomatoes 150g, halved
  • 0.5 ea Red Onion thinly sliced
  • 0.5 cup Kalamata Olives 75g, pitted
  • 0.5 cup Feta Cheese 75g, crumbled

Equipment

  • 1 Cast Iron Skillet Used for achieving deep sear marks on the chicken.
  • 1 Box grater For grating the cucumber for tzatziki.
  • 4 Meal Prep Containers Airtight glass containers recommended.

Method
 

Preparation
  1. Rinse rice until water is clear. Combine with water and salt in a pot. Boil, then simmer covered for 15-18 minutes until tender.
  2. Season chicken strips with oregano, salt, and pepper. Heat olive oil in a skillet over medium-high. Sear for 5-7 minutes per side until dark sear marks appear.
  3. Grate cucumber and squeeze dry in a towel. Mix with yogurt, garlic, and lemon juice until thick and creamy with green flecks.
  4. Divide rice and chicken into containers. Arrange cucumbers, tomatoes, onions, olives, and feta in rows. Top with a scoop of tzatziki and a lemon wedge.
