Grilled Chicken Bacon Ciabatta with Spicy Chipotle Mayo

Ingredients
  

Sandwich Components
  • 1 lb boneless skinless chicken breast 454g, pounded to 1/2 inch
  • 6 strips thick-cut bacon 170g, cooked until wavy
  • 2 large ciabatta rolls flour-dusted
  • 4 slices pepper jack cheese 84g, with visible pepper flecks
  • 1/4 cup mayonnaise 60ml
  • 1 tbsp chipotle peppers in adobo 15g, minced
  • 1 tbsp extra virgin olive oil 15ml

Equipment

  • 1 Cast-Iron Grill Pan Essential for diagonal char marks.
  • 1 Meat Tenderizer For even chicken thickness.

Method
 

Prep and Sear
  1. Pound chicken to 1/2-inch (1.25cm) thickness. Season with oil, salt, and pepper.
  2. Grill on medium-high for 4-5 minutes per side until dark diagonal char marks appear. Add cheese during the last 2 minutes.
  3. Fry bacon in a skillet until golden-brown and wavy; drain on paper towels.
  4. Spread chipotle mayo on toasted ciabatta, layer chicken, cheese, and 3 strips of bacon. Top with flour-dusted bun.

Notes
