Prep and Sear
- Pound chicken to 1/2-inch (1.25cm) thickness. Season with oil, salt, and pepper.
- Grill on medium-high for 4-5 minutes per side until dark diagonal char marks appear. Add cheese during the last 2 minutes.
- Fry bacon in a skillet until golden-brown and wavy; drain on paper towels.
- Spread chipotle mayo on toasted ciabatta, layer chicken, cheese, and 3 strips of bacon. Top with flour-dusted bun.
