  • 12 large Shrimp Peeled and deveined (6 per bowl)
  • 1 tsp Red Chili Flakes For dusting
  • 1 cup White Rice Uncooked (Jasmine or Basmati)
  • 2 whole Avocados Ripe, for chunky mash
  • 1 cup Yellow Corn Cooked kernels
  • 1/4 cup Red Onion Finely diced
  • 1/4 cup Greek Yogurt Or mayonnaise for the dressing base
  • 2 tbsp Lime Juice Freshly squeezed
  • 1 tsp Sriracha Adjust for pale orange color

Equipment

  • 1 Cast-Iron Grill Pan Essential for dark grill marks.
  • 1 Squeeze Bottle For the zigzag dressing pattern.

Method
 

Preparation
  1. Rinse rice until water is clear. Simmer in 1.5 cups (350ml) water for 15 minutes until fluffy.
  2. Mix corn, red onion, and cilantro. In a separate bowl, mash avocado with lime juice leaving large chunks.
  3. Season dry shrimp and sear on a hot grill pan for 2-3 minutes per side until dark marks appear. Sprinkle with chili flakes.
  4. Place rice in a bowl. Top with 6 shrimp, avocado mash, and corn salsa. Drizzle dressing in a zigzag and garnish with a lime wedge.

Notes

Use high heat for the shrimp to get those dark marks without overcooking.
