Preparation
- Rinse rice until water is clear. Simmer in 1.5 cups (350ml) water for 15 minutes until fluffy.
- Mix corn, red onion, and cilantro. In a separate bowl, mash avocado with lime juice leaving large chunks.
- Season dry shrimp and sear on a hot grill pan for 2-3 minutes per side until dark marks appear. Sprinkle with chili flakes.
- Place rice in a bowl. Top with 6 shrimp, avocado mash, and corn salsa. Drizzle dressing in a zigzag and garnish with a lime wedge.
