  • 1 medium head cauliflower, riced about 4 cups
  • 0.5 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon avocado oil
  • 2 tablespoons coconut aminos or soy sauce/tamari
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Method
 

  1. Sauté Aromatics: Heat the avocado oil in a large skillet over medium-high heat. Add the chopped onion and cook for 3-4 minutes, until softened and fragrant. Add the minced garlic and cook for another minute until you can smell it.
  2. Brown the Beef: Add the ground beef to the skillet. Break it apart with a spatula and cook until it's browned all over, about 5-7 minutes. Drain any excess grease from the pan.
  3. Add Seasoning: Stir in the paprika, onion powder, salt, and pepper. Mix well to ensure the beef is evenly coated with the spices.
  4. Cook the Cauliflower Rice: Add the cauliflower rice and coconut aminos to the skillet. Stir everything together and cook for 5-6 minutes, or until the cauliflower rice is tender-crisp. Be careful not to overcook it!
  5. Serve and Garnish: Divide the ground beef and cauliflower mixture into bowls. Add your favorite toppings and serve immediately.
