Method
- Preheat your oven to 400°F (200°C). Prepare a 9x13 inch baking dish or ensure you are using a large oven-safe skillet.
- Heat olive oil in a large skillet over medium-high heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
- Add the ground turkey to the skillet. Cook and break apart until browned, about 5-7 minutes. Drain any excess fat.
- Stir in the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for one minute to toast. Add diced sweet potatoes, rinsed black beans, and undrained diced tomatoes. Stir to combine.
- Bring the mixture to a simmer. Reduce heat, cover, and cook for 15-20 minutes, or until sweet potatoes are tender.
- If necessary, transfer the mixture to a baking dish. Top evenly with shredded cheddar cheese. Bake for 10-15 minutes until the cheese is melted and bubbly.
