  • 2 cups fresh pineapple cut into wedges
  • 1 large red bell pepper sliced into chunks
  • 1 large green bell pepper sliced into chunks
  • 1 medium red onion thickly sliced
  • 0.5 cup teriyaki glaze thick and dark amber
  • 1 tbsp white sesame seeds toasted
  • 3 stalks scallions thinly sliced

  • 1 Parchment Paper Prevents the sticky glaze from burning and sticking to the pan.

Method
 

Preparation and Roasting
  1. Preheat oven to 425°F (220°C). Line a rustic metallic baking sheet with parchment paper.
  2. Toss chicken chunks, pineapple wedges, peppers, and red onion with oil and salt. Spread in a single layer on the pan.
  3. Roast for 15 minutes until chicken is golden-brown and pineapple is slightly charred.
  4. Pour teriyaki glaze over the pan and toss to coat every piece. Roast for another 5 minutes until glaze is glossy and bubbling.
  5. Sprinkle with toasted sesame seeds and fresh scallions before serving.
