  • 4-6 rings Fresh Pineapple 1/2 inch (1.25cm) thick
  • 1 cup Unsweetened Pineapple Juice 240ml
  • 0.5 cup Soy Sauce (Shoyu) 120ml
  • 0.5 cup Dark Brown Sugar 100g, packed
  • 2 tbsp Fresh Ginger 30g, grated
  • 4 cloves Garlic minced
  • 1 tbsp Toasted White Sesame Seeds for garnish
  • 3-4 stalks Green Scallions chopped

Equipment

  • 1 Outdoor Grill or Cast Iron Grill Pan Used to achieve dark grill marks.
  • 1 Small Saucepan Used for the glaze reduction.
  • 1 Silicone Basting Brush For layering the thick glaze.

Method
 

Preparation and Grilling
  1. Whisk pineapple juice, soy sauce, brown sugar, ginger, and garlic. Reserve 1/2 cup (120ml) and marinate chicken in the rest for 4-24 hours.
  2. Simmer the reserved marinade in a saucepan for 8-10 minutes until it becomes a viscous, dark amber syrup.
  3. Sear chicken on a hot grill for 5-6 minutes per side. Baste frequently with the reduced glaze during the final minutes until glossy and charred.
  4. Grill pineapple rings for 2-3 minutes per side until golden-brown grill marks appear and sugars caramelize.
  5. Stack chicken thigh on a white plate, top with a pineapple ring, drizzle with extra glaze, and garnish with sesame seeds and green onions.
