  • 2 tbsp Olive Oil
  • 1 cup Broccoli Florets Cut into bite-sized pieces
  • 1 Carrot Peeled and thinly sliced
  • 1 Bell Pepper Any color, sliced
  • 1 small Zucchini Sliced into half-moons
  • 1/2 Onion Sliced
  • 2 cloves Garlic Minced
  • 1/2 tsp Sea Salt Or to taste
  • 1/4 tsp Black Pepper Freshly cracked
  • 1/4 tsp Red Pepper Flakes Optional

Method
 

  1. Wash and chop all vegetables into uniform, bite-sized pieces. Mince the garlic and slice the onion.
  2. Place a large skillet over medium-high heat. Add the olive oil and allow it to get hot until it shimmers.
  3. Add the carrots and broccoli to the hot pan. Sauté for 3-4 minutes, stirring occasionally.
  4. Add the sliced bell pepper and onion to the skillet. Continue to cook for another 4-5 minutes until they begin to soften.
  5. Stir in the zucchini and minced garlic. Cook for an additional 2-3 minutes, stirring often, until vegetables are tender-crisp.
  6. Remove the pan from the heat. Season with sea salt, black pepper, and optional red pepper flakes. Toss to combine and serve immediately.
