- Pat the chicken breasts dry and season them generously on all sides with the Cajun seasoning blend.
- Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5-7 minutes per side, until golden brown and cooked through (165°F). Remove from skillet and set aside.
- Reduce heat to medium. Melt butter in the same skillet. Add minced garlic and cook for 30 seconds until fragrant.
- Pour in the chicken broth to deglaze the pan, scraping up any browned bits. Stir in the heavy cream and bring to a simmer for 2-3 minutes to thicken.
- Reduce heat to low and stir in the Parmesan cheese until melted and smooth. Return the chicken to the skillet, coating it with the sauce. Garnish with fresh parsley and serve immediately.
