High-Protein Italian Pasta Salad with Cured Salami and Feta

  • 16 oz Rotini Pasta Cooked al dente
  • 8 oz Cured Salami Thinly sliced and folded into triangles
  • 1 cup Crumbled Feta Cheese
  • 1 cup Red & Yellow Bell Peppers Diced small
  • 1/2 cup Black Olives Sliced
  • 1 large English Cucumber Quartered and sliced
  • 1/2 medium Red Onion Thinly slivered
  • 1/2 cup Extra Virgin Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 1 tbsp Dried Oregano For heavy dusting
  • 1/4 cup Fresh Flat-Leaf Parsley Chopped

Equipment

  • 1 Large stockpot For boiling pasta
  • 1 Small Whisk For emulsifying the vinaigrette
  • 1 Large Mixing Bowl For tossing the salad

Method
 

Cook the Pasta
  1. Cook the rotini in salted boiling water for 8-10 minutes until al dente. Drain and rinse with cold water.
Prepare the Dressing
  1. In a small bowl, whisk olive oil, red wine vinegar, garlic, and Dijon mustard until glossy and emulsified.
Assembly
  1. In a large bowl, combine cooked pasta, diced peppers, folded salami triangles, olives, cucumber quarters, and onion slivers.
  2. Pour the vinaigrette over the salad and toss well. Fold in the feta cheese. Garnish with a heavy dusting of dried oregano and fresh parsley.
