  • 4 cups (450g) Green Cabbage finely shredded
  • 2 cups (150g) Purple Cabbage thinly sliced ribbons
  • 1 cup (120g) Carrots long thin julienned
  • 1 cup (240ml) Mayonnaise full-fat for gloss
  • 2 tbsp (30ml) Apple Cider Vinegar
  • 2 tbsp (25g) Granulated Sugar
  • 1/2 tsp (1g) Celery Seed
  • 1 tsp (2g) Cracked Black Pepper coarsely ground
  • 3 sprigs Fresh Parsley small sprigs for garnish

Equipment

  • 1 Chef's Knife or Mandoline For fine shredding
  • 1 Julienne Peeler For carrot ribbons
  • 1 Large white ceramic bowl For mixing and serving

Method
 

Prepare Vegetables
  1. Finely shred the green cabbage and purple cabbage into thin ribbons using a knife or mandoline. Rinse the purple cabbage separately in cold water and pat dry.
  2. Peel and julienne the carrots into long, thin orange strands to match the cabbage ribbons.
Mix and Toss
  1. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, and celery seed until thick and glossy.
  2. Pour the dressing over the vegetables in a large white ceramic bowl and toss until every strand is thoroughly coated.
  3. Dust the top with freshly cracked black pepper and garnish with small sprigs of fresh parsley.
