  • 1 cup Whole Milk 240ml, warmed to 110°F
  • 4 tbsp Unsalted Butter 57g, softened
  • 2 tbsp Granulated Sugar 25g
  • 1 packet Active Dry Yeast 7g
  • 1 large Egg 50g
  • 1 tsp Fine Sea Salt 6g
  • 1 large Egg for wash
  • 2 tbsp White Sesame Seeds 18g

Equipment

  • 1 Stand Mixer Fitted with a dough hook
  • 1 Digital Kitchen Scale For precise flour measurement
  • 1 Pastry Brush For egg wash application

Method
 

Dough Preparation
  1. Combine warm milk and sugar in mixer bowl. Sprinkle yeast on top and let bloom for 10 minutes until foamy.
  2. Add butter, egg, salt, and flour. Knead with a dough hook for 5-7 minutes until the dough is smooth and passes the windowpane test.
Proofing and Shaping
  1. Place dough in a greased bowl, cover, and let rise for 1.5 hours in a warm spot until doubled in size.
  2. Divide dough into 10 portions. Roll into 6-inch cylinders. Place on a baking sheet, cover, and rise for 45 minutes.
Baking
  1. Preheat oven to 375°F. Brush buns with egg wash and sprinkle with white sesame seeds.
  2. Bake for 15-18 minutes until the exterior is a deep golden-brown and the interior sounds hollow when tapped.
