- Season chicken with salt and pepper. Sear in a skillet until golden. Add chicken broth, minced chipotles, adobo sauce, honey, garlic powder, and onion powder. Bring to a simmer.
- Reduce heat, cover, and cook chicken for 15-20 minutes until done. Remove chicken, shred with two forks, then return to the skillet and toss with the sauce.
- Preheat oven to 375°F (190°C). Slice the slab of buns in half horizontally. Place the bottom half in a baking dish. Layer with the chicken mixture and then the cheese slices. Place the top half of the buns on.
- Mix melted butter with 1/2 tsp garlic powder and brush over the buns. Bake for 10-15 minutes until the cheese is melted and the tops are golden brown. Serve immediately.

Adjust the number of chipotle peppers to control the spice level. Two peppers offer a moderate heat.
