Ingredients
  

For the Honey Chipotle Chicken
  • 1.5 lbs boneless, skinless chicken breasts
  • 2-3 chipotle peppers in adobo sauce minced, plus 1 tbsp of the sauce
  • 1/3 cup honey
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
For Assembly
  • 12 count slider buns such as Hawaiian rolls
  • 6 slices Monterey Jack or cheddar cheese
  • 2 tbsp butter melted
  • 1/2 tsp garlic powder

Equipment

  • 1 Large Skillet
  • 1 9x13 inch Baking Dish
  • 1 Pastry Brush

Method
 

  1. Season chicken with salt and pepper. Sear in a skillet until golden. Add chicken broth, minced chipotles, adobo sauce, honey, garlic powder, and onion powder. Bring to a simmer.
  2. Reduce heat, cover, and cook chicken for 15-20 minutes until done. Remove chicken, shred with two forks, then return to the skillet and toss with the sauce.
  3. Preheat oven to 375°F (190°C). Slice the slab of buns in half horizontally. Place the bottom half in a baking dish. Layer with the chicken mixture and then the cheese slices. Place the top half of the buns on.
  4. Mix melted butter with 1/2 tsp garlic powder and brush over the buns. Bake for 10-15 minutes until the cheese is melted and the tops are golden brown. Serve immediately.

Notes

Adjust the number of chipotle peppers to control the spice level. Two peppers offer a moderate heat.
For a crispier bun, toast the inside of the buns before assembling.
These sliders can be assembled a few hours in advance, covered, and refrigerated until ready to bake.
