- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, toss the diced sweet potatoes with olive oil, a pinch of salt, and pepper. Spread them in a single layer on the prepared baking sheet and roast for 15 minutes.
- While the sweet potatoes are roasting, whisk together the honey, soy sauce, minced garlic, and apple cider vinegar in a small bowl. Set aside.
- Remove the baking sheet from the oven. Add the sliced sausage and broccoli florets. Drizzle about three-quarters of the honey garlic sauce over everything and toss to coat evenly.
- Return the baking sheet to the oven and roast for another 15-20 minutes, until the sweet potatoes are fork-tender and the broccoli is crisp-tender.
- Drizzle the remaining sauce over the finished dish. Garnish with fresh parsley or chopped green onions and serve hot.
