  • 1 large head broccoli cut into florets
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
  • 1/4 cup honey
  • 3 tablespoons soy sauce or tamari for a gluten-free option
  • 4 cloves garlic minced
  • 1 tablespoon apple cider vinegar

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the diced sweet potatoes with olive oil, a pinch of salt, and pepper. Spread them in a single layer on the prepared baking sheet and roast for 15 minutes.
  3. While the sweet potatoes are roasting, whisk together the honey, soy sauce, minced garlic, and apple cider vinegar in a small bowl. Set aside.
  4. Remove the baking sheet from the oven. Add the sliced sausage and broccoli florets. Drizzle about three-quarters of the honey garlic sauce over everything and toss to coat evenly.
  5. Return the baking sheet to the oven and roast for another 15-20 minutes, until the sweet potatoes are fork-tender and the broccoli is crisp-tender.
  6. Drizzle the remaining sauce over the finished dish. Garnish with fresh parsley or chopped green onions and serve hot.
