  • 1 baguette French Baguette Sliced into 1/2-inch rounds
  • 1/4 cup Extra Virgin Olive Oil Divided use
  • 6-8 medium Roma Tomatoes Diced and seeded (approx. 450g)
  • 3-4 cloves Fresh Garlic Minced
  • 1/4 cup Fresh Basil Chiffonade cut
  • 1 tsp Kosher Salt To taste
  • 1/2 tsp Black Pepper Freshly cracked
  • 2 tbsp Balsamic Glaze Store-bought or reduced

Equipment

  • 1 Cast-Iron Grill Pan For creating authentic grill marks.
  • 1 Serrated Knife To slice the baguette without crushing it.
  • 1 Wooden Serving Board For a rustic presentation.

Method
 

Prepare the Topping
  1. Combine diced tomatoes, minced garlic, 2 tbsp olive oil, salt, and pepper in a bowl. Let sit for 20 minutes at room temperature.
  2. Fold in half of the basil chiffonade just before assembly to keep it vibrant green.
Toast the Bread
  1. Brush baguette slices with remaining oil. Place on a preheated grill pan over medium-high heat for 1-2 minutes per side until charred grill marks appear.
Assembly
  1. Spoon tomato mixture onto the warm bread. Drizzle with balsamic glaze and garnish with remaining basil and cracked pepper.
