- In a medium bowl, whisk together the mayonnaise, red wine vinegar, minced garlic, Italian seasoning, and pepperoncini brine. Stir in the chopped pepperoncini and the thinly sliced red onion. Just before serving, fold in the shredded lettuce.
- Preheat your oven's broiler. Lay the split hoagie rolls on a baking sheet. Layer provolone cheese on both sides of the bread. On the bottom halves, layer the salami, smoked turkey, and pepperoni.
- Broil for 2-4 minutes until the cheese is melted and bubbly. Remove from the oven, top the meat with sliced tomatoes, then add a generous amount of the grinder salad. Place the top of the roll on, press gently, and serve immediately.
