Ingredients
  

Bun Ingredients
  • 1.5 cups super-fine almond flour 168g
  • 5 tbsp psyllium husk powder 45g, ensure it is the fine powder
  • 2 tsp baking powder 10g
  • 1 tsp sea salt 6g
  • 3 large egg whites approx. 90ml
  • 2 tsp apple cider vinegar 10ml
  • 1 cup boiling water 240ml
  • 2 tbsp white sesame seeds 18g, for topping

Equipment

  • 1 Baking Sheet Lined with parchment paper
  • 1 Hand Mixer or Stand Mixer To combine boiling water quickly
  • 1 Cast Iron Skillet For searing the beef patties

Method
 

Making the Dough
  1. Whisk together almond flour, psyllium husk powder, baking powder, and salt in a bowl.
  2. Add egg whites and apple cider vinegar. Begin mixing while pouring in the boiling water.
  3. Shape into 6 balls, flatten slightly on a lined tray, and press sesame seeds into the top.
Baking and Assembly
  1. Bake at 350°F (175°C) for 45-50 minutes until a deep golden-brown matte crust forms.
  2. Sear beef patties in a hot skillet until charred; melt cheddar on top in the last minute.
  3. Slice cooled bun, add mayo, patty with cheese, tomato, and romaine lettuce.

Notes
