  • 1/4 cup Honey 60ml, raw preferred
  • 1/4 cup Fresh Lime Juice 60ml
  • 1 tbsp Lime Zest 6g
  • 2 tbsp Soy Sauce 30ml, low sodium
  • 2 tbsp Extra Virgin Olive Oil 30ml
  • 3 cloves Garlic 15g, minced
  • 1 tsp Cracked Black Pepper Coarse
  • 2 tbsp Fresh Cilantro 8g, chopped
  • 1 whole Lime Cut into wedges

Equipment

  • 1 Outdoor Grill or Cast Iron Grill Pan Essential for char marks.
  • 1 Instant-Read Thermometer Ensures chicken reaches 165°F.
  • 1 Silicone Basting Brush For applying the amber glaze.

Method
 

Preparation
  1. Whisk honey, lime juice, zest, soy sauce, oil, garlic, and pepper. Marinate chicken in 2/3 of this mixture for 30 mins to 4 hours.
  2. Simmer the reserved 1/3 of the marinade in a saucepan for 3-5 minutes until thickened and glossy.
Grilling
  1. Preheat grill to 400°F (200°C). Place chicken at 45-degree angle. Grill 4 mins, rotate 90 degrees, grill 2 mins more for diagonal marks.
  2. Flip chicken and brush with the reduced glaze. Cook until internal temperature reaches 165°F (74°C).
  3. Rest for 5 mins. Top with fresh cilantro, cracked pepper, and serve with lime wedges.
