Preparation
- Whisk honey, lime juice, zest, soy sauce, oil, garlic, and pepper. Marinate chicken in 2/3 of this mixture for 30 mins to 4 hours.
- Simmer the reserved 1/3 of the marinade in a saucepan for 3-5 minutes until thickened and glossy.
Grilling
- Preheat grill to 400°F (200°C). Place chicken at 45-degree angle. Grill 4 mins, rotate 90 degrees, grill 2 mins more for diagonal marks.
- Flip chicken and brush with the reduced glaze. Cook until internal temperature reaches 165°F (74°C).
- Rest for 5 mins. Top with fresh cilantro, cracked pepper, and serve with lime wedges.
