Ingredients

  • 2 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 2 tbsp olive oil

Equipment

  • 1 Baking Sheet
  • 2 Mixing Bowls

Method

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper. Pat the chicken breasts dry and cut them into 1-inch cubes.
  2. In a medium bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, and salt. Mix well.
  3. In a separate bowl, drizzle the chicken pieces with olive oil and toss to coat. Transfer the oiled chicken to the breadcrumb mixture and toss until each piece is fully coated.
  4. Arrange the chicken in a single layer on the prepared baking sheet. Bake for 15-20 minutes, flipping halfway through, until golden brown, crispy, and the internal temperature reaches 165°F (74°C).
  5. Let the chicken bites cool for a few minutes before serving with your favorite dipping sauces.

Notes

Tip 1: Don't crowd the pan! Giving the chicken pieces space ensures they bake up crispy instead of steaming.
Tip 2: For an extra crispy coating, toast the breadcrumbs in a dry skillet for 2-3 minutes before mixing them with the other ingredients.
