Method
- If using fresh lemon balm, gently rinse the leaves under cool water and pat them dry.
- In a small pot or kettle, bring the 2 cups of water to a gentle simmer (around 180°F or 82°C).
- Place the fresh or dried lemon balm leaves into a teapot or heat-safe jar. Pour the hot water over the leaves.
- Cover the container and let the lemon balm steep for 10-15 minutes.
- Strain the leaves from the liquid. Stir in optional lemon juice and sweetener. Serve warm or chill to make iced tea.
Notes
For a metabolism boost, add a few slices of fresh ginger during the steeping process. For a gentle energy lift, add a green tea bag for the last 3-4 minutes of steeping.
