Making the Bites
- Add the full-fat cottage cheese to your food processor. Blend on high for 60 seconds until completely smooth and creamy.
- Transfer the whipped cottage cheese into a large mixing bowl. Add the honey, lemon juice, and lemon zest. Whisk until well combined.
- Pour in the rolled oats, vanilla protein powder, and fine sea salt. Use a spatula to mix until a slightly moist, pale yellow dough forms.
- Place the bowl in the refrigerator for 15 to 20 minutes to allow the oats to absorb the moisture.
- Remove the chilled dough from the fridge. Very gently fold in the whole blueberries, being careful not to crush them.
- Scoop out 2 tablespoons of dough at a time and roll into bite-sized balls with damp hands. Place on a parchment-lined plate and serve.
