  • 1 lb (450g) Sea Scallops Dry-packed, U10 or U12 size
  • 8 oz (225g) Angel Hair Pasta Dry weight
  • 4 tbsp (56g) Unsalted Butter Divided use
  • 3 cloves Garlic Finely minced
  • 1 whole Lemon Juiced and zested, plus wedges for garnish
  • 1 tbsp (15ml) Grapeseed Oil Or avocado oil for high-heat searing
  • 2 tbsp (8g) Fresh Parsley Finely chopped
  • 1/2 tsp Sea Salt To taste
  • 1/4 tsp Black Pepper Freshly cracked

  • 1 Stainless Steel Skillet Heavy-bottomed for even heat distribution.
  • 1 Pasta Pot Large pot for boiling angel hair.
  • 1 Tongs For precise flipping of scallops.

Method
 

Preparation and Searing
  1. Remove side muscles and pat scallops extremely dry with paper towels. Season with salt and pepper right before searing.
  2. Heat oil in a skillet over medium-high heat until shimmering. Add scallops, searing undisturbed for 2 minutes until a deep golden-brown crust forms.
  3. Flip scallops. Add 1 tbsp butter and half the garlic to the pan. Baste scallops with foaming butter for 60-90 seconds. Remove and set aside.
Pasta and Sauce
  1. Cook angel hair in salted boiling water for 2-3 minutes. Reserve 1/2 cup pasta water, then drain.
  2. In the same skillet, melt remaining butter. Sauté remaining garlic for 30 seconds. Whisk in lemon juice, zest, and reserved pasta water to emulsify.
  3. Toss pasta in the sauce. Serve in bowls topped with 5 scallops each, fresh parsley, and a lemon wedge.
