  • 4 cups bread flour 500g
  • 1 3/4 cups warm water 420ml, approx 105°F
  • 2 1/4 tsp active dry yeast 7g
  • 1 tbsp honey 21g
  • 1 1/2 tsp sea salt 9g
  • 1/2 cup extra virgin olive oil 120ml, divided
  • 3-4 medium Roma tomatoes thinly sliced
  • 8 oz mozzarella pearls 225g, bocconcini style
  • 1 cup fresh basil leaves whole leaves
  • 1 tsp dried oregano 2g
  • 1 tbsp coarse sea salt for finishing

Equipment

  • 1 9x13 inch metal baking pan Metal is preferred for a crispier crust.
  • 1 Large Glass Mixing Bowl Used for the primary fermentation.

Method
 

Prepare the Dough
  1. Whisk warm water, honey, and yeast in a large bowl. Let stand for 10 minutes until foamy.
  2. Mix in flour and fine salt until shaggy. Cover and let rise in a warm spot for 1.5 to 2 hours until doubled.
Shape and Dimple
  1. Coat 9x13 pan with 2 tbsp oil. Transfer dough to pan, let rest 20 minutes, then stretch to edges.
  2. Drizzle more oil on top. Use fingers to press deep indentations into the dough until you feel the pan bottom.
Top and Bake
  1. Press tomato slices and mozzarella pearls into the dimples. Sprinkle with oregano and coarse salt.
  2. Bake at 425°F (220°C) for 20-25 minutes until golden-brown. Top with fresh basil immediately after baking.
