  • 1.5 lbs Salmon fillet Center-cut, skin-on or off
  • 4 cups Fresh baby spinach Wilted
  • 1/2 cup Sun-dried tomatoes Oil-packed, chopped
  • 1/2 cup Feta cheese Chunky crumbles
  • 2 tbsp Extra virgin olive oil Divided
  • 1 tsp Dried oregano
  • 2 tbsp Fresh parsley Finely chopped

Method
 

Preparation
  1. Preheat oven to 400°F (200°C). Layer baby spinach in the bottom of a rectangular ceramic dish and drizzle with 1 tbsp olive oil.
  2. Pat the salmon dry and place on spinach. Season with salt, pepper, and dried oregano.
  3. Scatter sun-dried tomatoes and crumbled feta over the salmon. Drizzle with remaining oil.
  4. Bake for 12-15 minutes until salmon is flaky and edges are slightly caramelized. Finish with fresh parsley.
