- Combine rice, water, and salt in a pot. Boil, then simmer covered for 15 minutes. Let sit for 5 minutes before fluffing.
Sear the Chicken
- Toss cubed chicken with 1 tbsp olive oil, oregano, salt, and pepper.
- Heat oil in a skillet over medium-high. Add chicken and cook undisturbed for 4 minutes to get dark golden-brown char marks. Flip and cook until internal temperature is 165°F (74°C).
Assemble the Bowls
- Divide rice among containers. Add seared chicken, cucumbers, tomatoes, onions, olives, and feta in organized sections.
- Add a center dollop of tzatziki, a sprinkle of oregano, and a fresh lemon wedge to each container.
