Preparation and Searing
- Heat olive oil in a skillet. Season chicken chunks with salt and pepper. Sear until golden-brown char marks appear, about 4-6 minutes. Remove chicken and set aside.
- Add shallots, garlic, and dry orzo to the pan. Sauté for 2 minutes until the orzo is slightly toasted and fragrant.
Simmering and Finishing
- Pour in broth, lemon juice, and oregano. Scape the bottom of the pan. Cover and simmer for 8-10 minutes until orzo is tender.
- Return chicken to the pan. Add cherry tomatoes and olives. Cover for 3 minutes until tomatoes blister. Fold in spinach until wilted.
- Remove from heat. Top with crumbled feta, fresh parsley, and extra oregano. Serve warm.
