- Preheat your oven to 400°F (200°C). Pat the salmon fillets completely dry with a paper towel.
- Place the salmon fillets on a baking sheet lined with parchment paper. In a small bowl, mix together the olive oil, minced garlic, oregano, salt, and pepper. Rub this mixture evenly over the top and sides of each salmon fillet.
- Bake for 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F.
- While the salmon is baking, prepare the topping. In a medium bowl, combine the cherry tomatoes, Kalamata olives, crumbled feta, chopped red onion, fresh parsley, dill, and lemon juice. Gently toss.
- Remove the salmon from the oven and top each fillet with a generous spoonful of the Mediterranean topping. Serve immediately.
