Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the thawed puff pastry into 3-inch (7.5cm) squares and place them on the baking sheet.
- Using a small circular cutter or spoon, press a circular well into the center of each square, leaving a border.
Assembly
- Beat cream cheese, granulated sugar, vanilla, and salt until smooth and matte. Do not over-mix.
- Spoon 1 tbsp of filling into each well. Brush the pastry borders with egg wash for a glossy finish.
Baking and Finishing
- Bake for 15-18 minutes until the puff pastry is golden-brown and the filling is set.
- Cool for 10 minutes. Dust with powdered sugar and top each with a single fresh raspberry.
