Ingredients
  

  • 1 1/2 cups Rolled Oats Use certified gluten-free if needed
  • 1 cup Vanilla Protein Powder Whey or plant-based
  • 1 cup Medjool Dates Pitted and packed
  • 1/2 cup Almond Butter Creamy and unsweetened
  • 2 tbsp Maple Syrup Or honey
  • 1 tsp Peppermint Extract
  • 1/3 cup Mini Chocolate Chips Use dairy-free if vegan
  • 1-2 tbsp Water or Almond Milk As needed for consistency

Method
 

  1. Add rolled oats to a food processor and pulse until a coarse flour forms.
  2. Add the protein powder and pulse briefly to combine with the oats.
  3. Add pitted dates, almond butter, maple syrup, and peppermint extract. Blend until the mixture starts to form a sticky dough.
  4. If the mixture is too dry, add 1 tablespoon of water or almond milk and blend again.
  5. Transfer the dough to a bowl and fold in the mini chocolate chips.
  6. Scoop and roll the mixture into 1-inch balls. Place on a parchment-lined plate and refrigerate for at least 30 minutes to set.
