- Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a separate large bowl, mash the bananas. Stir in the melted butter, sugar, egg, vanilla extract, and sour cream.
- Add the dry ingredients to the wet ingredients and fold gently with a spatula until just combined. Do not overmix.
- Pour batter into the prepared loaf pan. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
