Prepare the Crust
- Mix crushed vanilla wafers, melted butter, and sugar until it looks like wet sand.
- Press firmly into the bottom of a 9-inch springform pan. Freeze for 15 minutes.
Make the Banana Filling
- Beat softened cream cheese, powdered sugar, and dry pudding mix until smooth. Fold in mashed bananas until visible specks appear.
- In a separate bowl, whip 1.5 cups heavy cream to stiff peaks. Gently fold into the cream cheese mixture.
- Spread over the crust and refrigerate for at least 6 hours or overnight.
Garnish and Serve
- Whip the remaining 1 cup cream and 1 tbsp sugar. Spread over the set cheesecake.
- Garnish with banana slices, whole vanilla wafers tucked into the sides, and a sprinkle of cookie crumbs.
