Ingredients
  

Crust
  • 2.5 cups Vanilla Wafer Cookies finely crushed (approx 250g)
  • 6 tbsp Unsalted Butter melted (85g)
  • 2 tbsp Granulated Sugar optional for structure (25g)
Filling
  • 24 oz Cream Cheese full-fat, softened (680g)
  • 1 cup Powdered Sugar sifted (120g)
  • 1 package Instant Banana Pudding Mix 3.4 oz (96g) box
  • 2 medium Bananas very ripe, mashed well
  • 1.5 cups Heavy Whipping Cream chilled (360ml)
Topping
  • 1 cup Heavy Whipping Cream chilled (240ml)
  • 1 tbsp Powdered Sugar for stability (15g)
  • 1 whole Banana sliced into rounds for garnish
  • 6 whole Vanilla Wafer Cookies for side tucking and crumbs

Equipment

  • 1 Springform Pan 9-inch (23cm) size for a tall profile.
  • 1 Electric hand mixer Essential for whipping the filling and cream topping.
  • 1 Offset Spatula For smoothing the pale-yellow filling perfectly flat.

Method
 

Prepare the Crust
  1. Mix crushed vanilla wafers, melted butter, and sugar until it looks like wet sand.
  2. Press firmly into the bottom of a 9-inch springform pan. Freeze for 15 minutes.
Make the Banana Filling
  1. Beat softened cream cheese, powdered sugar, and dry pudding mix until smooth. Fold in mashed bananas until visible specks appear.
  2. In a separate bowl, whip 1.5 cups heavy cream to stiff peaks. Gently fold into the cream cheese mixture.
  3. Spread over the crust and refrigerate for at least 6 hours or overnight.
Garnish and Serve
  1. Whip the remaining 1 cup cream and 1 tbsp sugar. Spread over the set cheesecake.
  2. Garnish with banana slices, whole vanilla wafers tucked into the sides, and a sprinkle of cookie crumbs.
