- In a large mixing bowl, add the rolled oats, creamy peanut butter, honey, ground flax seeds, semi-sweet chocolate chips, chia seeds, and vanilla extract.
- Stir all the ingredients together until they are thoroughly combined into a sticky mixture.
- Cover the bowl and place it in the refrigerator to chill for at least 30 minutes. This will make the mixture easier to handle.
- Scoop approximately 1 tablespoon of the chilled mixture and roll it into a 1-inch ball between your hands. Place the finished energy bite on a parchment-lined baking sheet and repeat with the remaining mixture.
