  • 1 cup (250g) Creamy Peanut Butter High quality
  • 1/2 cup (113g) Unsalted Butter Softened
  • 3/4 cup (150g) Light Brown Sugar Packed
  • 1/4 cup (50g) Granulated Sugar
  • 1 Large Egg Room temperature
  • 1 tsp (5ml) Vanilla Extract
  • 1 tbsp (10g) Flaky Sea Salt For garnish

Method
 

Prepare the Dough
  1. Cream softened butter and both sugars in a large bowl for 2-3 minutes until fluffy.
  2. Beat in the egg, vanilla, and creamy peanut butter until a smooth base forms.
  3. Whisk oat flour, baking soda, and fine salt. Gradually mix into the wet ingredients. Rest dough for 10 minutes.
Shape and Bake
  1. Scoop 1.5-inch balls and place on crumpled parchment. Use a fork to press a deep cross-hatch pattern.
  2. Bake at 350°F (175°C) for 10-12 minutes until edges are golden-brown and centers are soft. Garnish with flaky sea salt immediately.
