- In a large bowl, using a stand mixer or hand mixer, beat the softened unsalted butter, powdered sugar, orange zest, and vanilla extract until light and fluffy, about 2-3 minutes.
- In a separate bowl, whisk together the all-purpose flour, ground cardamom, and salt.
- Gradually add the dry ingredients to the creamed butter mixture on low speed. Mix only until the flour is just combined.
- Form the dough into a flat disc, wrap it tightly in plastic wrap, and refrigerate for at least 1 hour.
- Preheat oven to 350°F (175°C). On a lightly floured surface, roll the chilled dough to about 1/4-inch thickness. Use your favorite cookie cutters to cut out shapes and place them on a parchment-lined baking sheet.
- Bake for 12-15 minutes, or until the edges are lightly golden. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
