  • 2 1/4 tsp (7g) Active Dry Yeast
  • 4 cups (500g) Bread Flour Plus extra for dusting
  • 2 large Egg Yolks Room temperature
  • 1/4 cup (55g) Unsalted Butter Melted
Cheesecake Filling
  • 8 oz (225g) Cream Cheese Softened
  • 1/2 cup (120ml) Heavy Cream Chilled
  • 1/2 cup (60g) Powdered Sugar
Peach Topping & Streusel
  • 3 large Peaches Diced
  • 1 tsp (5g) Ground Cinnamon
  • 1/2 cup (65g) All-purpose Flour For streusel
  • 1/4 cup (55g) Cold Butter Cubed

Equipment

  • 1 Dutch Oven For deep frying
  • 1 Piping Bag With a wide round tip
  • 1 Digital Oil Thermometer To maintain 350°F

Method
 

Dough Prep
  1. Combine warm milk, yeast, and sugar. Let sit for 5-10 minutes until foamy.
  2. Add yolks, melted butter, and flour. Knead until smooth. Let rise for 90 minutes.
Frying
  1. Heat oil to 350°F (175°C). Fry donuts for 2 minutes per side until deep golden-brown.
  2. Immediately toss hot donuts in cinnamon sugar mixture.
Assembly
  1. Pipe thick cheesecake filling into the center of the cooled donuts.
  2. Spoon syrupy peaches over the filling and sprinkle with pre-baked streusel.
