Preparation
  1. Preheat oven to 375°F (190°C). Toss sliced peaches with sugar, cornstarch, lemon juice, and cinnamon in a bowl. Let sit for 15 minutes until a thick orange syrup forms.
  2. In a separate bowl, combine oats, flour, brown sugar, and salt. Cut in the cold butter until chunky, pea-sized clusters form.
Baking
  1. Pour peaches into the white ceramic dish. Spread the heavy layer of oatmeal crumble on top.
  2. Bake for 40-45 minutes until the fruit is bubbling and the topping is a toasted golden-brown.
  3. Allow to cool for 5 minutes, then add a large scoop of vanilla bean ice cream to the center and serve immediately.
