  • 1/2 cup (100g) Granulated Sugar
  • 2 cups (250g) All-Purpose Flour
  • 1 tsp (5ml) Vanilla Bean Paste
  • 1/2 tsp (3g) Fine Sea Salt
Peach Filling
  • 4 large (~600g) Yellow Peaches Sliced into wedges
  • 1/4 cup (50g) Granulated Sugar
  • 2 tbsp (16g) Cornstarch
  • 1 tbsp (15ml) Lemon Juice Freshly squeezed
Crumble Topping & Glaze
  • 1.5 cups (185g) All-Purpose Flour
  • 3/4 cup (170g) Cold Butter Cubed
  • 1/2 cup (100g) Brown Sugar Packed
  • 1/4 cup (85g) Pure Honey For drizzling

Equipment

  • 1 8x8-inch square baking pan Metal preferred for even browning.
  • 1 Parchment Paper To create a sling for easy removal.
  • 1 Chef's Knife Sharp blade for clean edges.

Method
 

Prepare the Base
  1. Preheat oven to 350°F (175°C) and line an 8x8 inch pan with parchment paper.
  2. Cream softened butter and sugar. Mix in flour, vanilla, and salt. Press into pan and blind bake for 12-15 minutes until pale golden.
Fruit and Topping
  1. Toss peach slices with sugar, cornstarch, and lemon juice. Let sit for 10 minutes until glossy.
  2. Pinch cold butter into flour and brown sugar until large, craggy clumps form.
Assembly and Final Bake
  1. Layer peaches over the base, top with crumble, and bake for 30-35 minutes until golden-brown and bubbling.
  2. Cool for 20 minutes, then drizzle with warmed liquid honey over the peaks.
