  • 2 cups All-purpose flour 250g
  • 1 cup Granulated sugar 200g
  • 1/2 cup Unsalted butter 115g, softened
  • 1/2 cup Sour cream 120ml
  • 1 cup Crushed pineapple 225g, well-drained
  • 1 tbsp Vanilla extract 15ml
  • 2 units Large eggs
  • 1/4 cup Brown sugar 50g
  • 3 units Pineapple rings Canned in juice
  • 3 units Maraschino cherries Patted dry
  • 1/2 cup Powdered sugar 60g

Equipment

  • 1 9x5 inch Loaf Pan Light-colored metal preferred.
  • 1 Fine-mesh strainer For draining crushed pineapple.
  • 1 White Ceramic Platter For the final reveal.

Method
 

Preparation
  1. Melt 2 tbsp butter in the loaf pan, sprinkle with brown sugar, and arrange pineapple rings and cherries.
  2. Cream butter and sugar, add eggs, vanilla, and sour cream. Fold in dry ingredients and crushed pineapple bits.
  3. Pour batter into pan and bake at 350°F (175°C) for 55-65 minutes until golden brown.
  4. Cool for 10 minutes, flip onto a platter, and drizzle with a clear sugar glaze made from pineapple juice and powdered sugar.
