Raw Asparagus Salad with Lemon Vinaigrette

Ingredients
  

For the Salad
  • 1 lb fresh asparagus tough ends trimmed
  • 1/4 cup shaved Parmesan cheese
  • 1/4 cup walnuts toasted and roughly chopped
For the Lemon Vinaigrette
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1/2 tsp lemon zest
  • 1 tbsp shallot finely minced
  • 1 tsp Dijon mustard
  • 1/4 tsp salt or to taste
  • 1/8 tsp black pepper freshly ground, or to taste

Equipment

  • 1 Vegetable Peeler (Y-Peeler Recommended)
  • 1 Large Bowl
  • 1 Small bowl or jar for dressing

Method
 

  1. In a small bowl or a jar with a lid, combine the extra virgin olive oil, lemon juice, lemon zest, minced shallot, and Dijon mustard. Whisk or shake until well combined and emulsified. Season with salt and pepper.
  2. Wash and dry the asparagus stalks. Snap off the woody ends. Lay a stalk flat on a cutting board and use a vegetable peeler to shave it into long, thin ribbons. Place the ribbons in a large salad bowl.
  3. Add the shaved Parmesan cheese and toasted walnuts to the bowl with the asparagus ribbons.
  4. Just before serving, pour the lemon vinaigrette over the salad. Gently toss to combine, ensuring everything is lightly coated. Serve immediately.
