- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter and 1 cup of granulated sugar with an electric mixer until light and fluffy, about 2-3 minutes. Beat in the egg, vanilla extract, and red food coloring until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing on low until just combined. Do not overmix. Cover and chill the dough for at least 1 hour.
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper. Place extra granulated sugar in a shallow bowl.
- Shape the chilled dough into 1-inch balls. Roll each ball in the sugar to coat and place 2 inches apart on the baking sheets. Bake for 8-10 minutes, until the edges are set.
- Immediately after removing from the oven, press a Hershey's Kiss into the center of each cookie. Let cool on the baking sheet for 5 minutes before moving to a wire rack to cool completely.
