  • 1 whole head Garlic Roasted until golden
  • 1 cup Unsalted Butter 227g, high-quality
  • 1/4 cup Fresh Parsley 15g, finely chopped
  • 1 tsp Red Pepper Flakes For heat and color
  • 1 tbsp Lemon Juice 15ml, freshly squeezed
  • 1 tsp Dijon Mustard 5g, for emulsion
  • 1/2 tsp Smoked Paprika 1g, for orange-yellow color

Equipment

  • 1 Aluminum Foil For roasting garlic
  • 1 Small Saucepan For melting butter
  • 1 Whisk To emulsify the sauce

Method
 

Roast the Garlic
  1. Slice the top off the garlic head, drizzle with oil, and wrap in foil.
  2. Roast at 400°F (200°C) for 40 minutes until cloves are soft and golden-brown.
Assemble the Butter
  1. Squeeze the roasted garlic into a paste and whisk with melted butter.
  2. Whisk in parsley, chili flakes, lemon, mustard, and paprika until thick and creamy.
