  • 1 lb hot pork sausage
  • 10 oz can Rotel Diced Tomatoes & Green Chilies drained well
  • 3 cups Bisquick baking mix
  • 2 cups sharp cheddar cheese freshly shredded
  • 8 oz cream cheese softened

Method
 

  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the uncooked pork sausage, drained Rotel, Bisquick, shredded cheddar cheese, and softened cream cheese.
  3. Using your hands or a stand mixer, mix the ingredients until just combined. Do not overmix.
  4. Roll the mixture into 1-inch balls and place them about an inch apart on the prepared baking sheet.
  5. Bake for 20-25 minutes, or until golden brown and cooked through (internal temperature of 160°F).
  6. Let cool slightly before serving warm.
