Prep and Sear
- Heat olive oil in a 12-inch cast iron skillet over medium-high heat. Add the sliced sausage and sear for 3-4 minutes per side until the edges are charred and crispy. Remove to a plate.
- In the same skillet with the remaining drippings, add the red, yellow, and green pepper strips and onions. Sauté for 8-10 minutes until the peppers show sear marks and onions are translucent.
- Pour in the chicken stock or wine, scraping the bottom of the pan to release the fond. Return the sausage to the skillet along with the butter. Toss until a glistening sauce forms.
- Top with chopped fresh parsley and dried red chili flakes. Serve immediately directly from the skillet.
